A tilapia fillet with basil and tomato

Tomato-Basil Tilapia

You may be surprised to know that this recipe actually comes from our girl, Paula Deen.  It’s a wonderful option if you want a healthy dinner in a hurry.  Let us know what you think!

Ingredients:

  • 2 tilapia filets (8-ounces each)
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp fresh basil leaves, minced*
  • 1 tsp fresh oregano leaves, minced*
  • 1 tsp onion powder
  • 1 tsp minced garlic
  • 3 tbsp olive oil, separated
  • 1 large tomato, thinly sliced
  • 1 teaspoon fresh lemon juice

*substitute dry spices if you don’t have fresh ones on hand

Cooking instructions:

Preheat the oven to 400 degrees F.  Spray a shallow baking dish with nonstick cooking spray.  Sprinkle or rub the fish filets with salt and pepper, and place them in the baking dish.  Sprinkle with basil, oregano, onion powder and garlic.  Drizzle 2 tbsp of olive oil over the fish.  Lay tomato slices over each fish until covered.  Drizzle the last tbsp of olive oil over the dish.  Bake 20-25 minutes or until fish is flaky.  Squeeze lemon juice over the fish and serve immediately.
